Sweet Potato Fries

Here's a recipe for what is becoming a great replacement to French Fries at many restaurants:  Sweet Potato Fries.  The crunchy sweet and salty taste is sure to please!

Ingredients:
1  large sweet potato (about 1/2 lb.)             2 T olive oil       1/4 t black pepper                      1/4 t kosher salt or sea salt
1/4 t ground red pepper.    Honey or maple syrup if desired for dipping

Oven 350 degrees.  Lightly spray baking sheet with cooking spray.  Peel sweet potato and cut lengthwise into spears.  Sprinkle with oil, salt, black pepper, and ground red pepper mixture.  Arrange in single layer on baking sheet.  Separate potatoes.  Bake 45 minutes until lightly browned.  Serve with honey or maple syrup (optional).  Enjoy!
